This is one of the lots that are part of our direct-to-consumer initiative in Ethiopia, the birthplace of coffee. Many factors contribute to the uniqueness of Ethiopian coffee, and one of them is the environment in which the plants grow, mostly within lush native forests, which is why most Ethiopian coffees are organic by default.
Gedeb is a district located in the Yirgacheffe region, in the south of the country, renowned for the distinctive floral character that has defined the coffee from this area for years. During our recent visits to Ethiopia, we have observed that, due to the longevity of the plants, only those that receive proper maintenance and care continue to preserve all of this characteristic complexity. This requirement makes it essential to collaborate with producers who actively and consistently work on their plots and coffee plantations.
As for the native varieties that grow in this area, their cherries are juicy and large, although the resulting cherries are small, compact, and very dense. Once harvested by local growers, the cherries are hand-sorted according to their ripeness before processing. In this batch, composed of Grade 1 cherries—those at their peak ripeness—the cherries are pulped using clean water at the local processing facility and left to ferment for 36 hours. Afterward, they are washed again with clean water and left to dry for about 15 days on raised African drying beds until they reach the optimal moisture level.
We roast to order, which means we don't keep roasted coffee in stock at the shop.
As a matter of routine, we have three roasting days per week: Monday, Tuesday, and Thursday (excluding public holidays). If you place your order before 8:00 a.m. on one of those days, your coffee will be roasted that same day; otherwise, it will be roasted the next day.
Orders are sent to their destination the day after they are toasted (Tuesday, Wednesday and Friday respectively).
Please note that if your order does not contain coffee, it will be shipped the next business day after it is placed and will arrive at its destination within the following 48 hours (excluding holidays).
