Ananías Silvestre

Each season we travel to Colombia to visit the Department of Huila, considered one of the best areas in the country for the growth and high yield of coffee plants. Here we work alongside Coocentral, a cooperative that focuses on complete transparency and close collaboration with producers to promote their economic security.

Ananías, the producer of this lot, owns a farm in the municipality of Guadalupe. He inherited the farm from his father 40 years ago, who worked cultivating corn and tobacco before dedicating himself to coffee production. Currently, the Caturra and Castillo varieties are grown on the farm, and Ananías's goal is to focus his efforts on producing high-quality coffee.

The process for this coffee begins with the hand-picking of the cherries, followed by pulping. The coffee is then left to ferment, and once washed, the beans are laid out to dry on raised beds for 25 to 30 days, being turned periodically to ensure even drying.
