Arturo Avilés Espresso

Arturo Avilés is one of the producers we began working with in 2017 in the Guadalupe area of the Huila department. This region is characterized by its rich biodiversity, countless springs, and a humid climate with year-round temperature variations.

A key strength of these producers is that they live on the farm, giving them complete control over the entire process. "El Silencio" is Arturo's farm, located on the mountainside where his Castillo variety plantation and some older Bourbon plants grow. He processes the freshly picked cherries, which are then harvested by local workers, and stores the coffee until it is delivered to the Cooperative.

This batch undergoes a long fermentation, with the cherries resting for several hours. Afterward, they are pulped and undergo extended dry fermentation, developing intense and clean flavors. The coffee is then taken to solar dryers protected from the high humidity of the region. Drying is slow, taking between 15 and 25 days.
