This lot is the product of our direct relationship with producers in Nueva Segovia, where we met the personification of meticulousness: Luis Balladarez. A keen taster, a mid-sized producer, naturally curious, and passionate about continuous improvement. In 2015, we introduced ideas and concepts that Luis welcomed with interest. The following year, he surprised us with a table of shade-dried coffees, revealing greater depth of flavor.
The "Un Regalo de Dios" (URDD) farm is located in the Dipilto-Jalapa mountain range, with a cloud pine forest to the south and broadleaf forest to the east and north. It has an ideal microclimate with favorable temperatures and excellent conditions for coffee production. The farm's soil is sandy and loose, with a rich biodiversity of flora. Under Luis Alberto's management, the main motivation is to help everyone involved, not only financially but also in their daily lives.
Our collaboration focused again on the post-harvest stage, applying various fermentation and drying techniques. This batch was developed using our 'Honey Glory' recipe, part of a series of processes we carry out with producers at source. The Java variety in this batch is very special, as it arrived on the island of Java from the eastern Horn of Africa. Isolated, it evolved to create a variety with narrow leaves and elongated fruits that develop a very delicate and complex profile in the cup.
Extraction recipe
En V60, añadir 12 g de café con molienda medio gruesa y verter agua a 94ºC en varios pulsos: 50g + 50g + 100g (200g de agua en total). Tiempo total de extracción ~2:00 min.
Roasting and Shipping
We roast to order, which means we don't keep roasted coffee in stock at the shop. As a matter of routine, we have three roasting days per week: Monday, Tuesday, and Thursday (excluding public holidays). If you place your order before 8:00 a.m. on one of those days, your coffee will be roasted that same day; otherwise, it will be roasted the next day. Orders are sent to their destination the day after they are toasted (Tuesday, Wednesday and Friday respectively). Please note that if your order does not contain coffee, it will be shipped the next business day after it is placed and will arrive at its destination within the following 48 hours (excluding holidays). Shipping costs are calculated during the checkout process.
