URDD Catuaí Natural Espresso

We arrived in the Nueva Segovia region looking for producers focused on quality and found meticulousness personified in Luis Balladarez. A great cupper, a medium-sized producer, naturally curious, and obsessed with continuous improvement. So, in 2015, we brought ideas and concepts that Luis listened to attentively, and the following year he surprised us with a table of shade-dried coffees exhibiting greater flavor depth. Two years later, after an inspiring trip to Colombia, we decided to focus the project on Mozonte and tried our first anaerobic and natural processes with water resting, which marked the birth of our own processing recipes. In the following years, a large shade structure enveloped his mill for slow drying, allowing him to experiment with different techniques that are, without a doubt, a great distinguishing feature. Luis won the Cup of Excellence in 2018 and 2020.

Finca “La Esperanza” is located in the Dipilto-Jalapa mountain range, in the north of the Nueva Segovia department, at an altitude ranging between 1400 and 1700 meters above sea level. This location enjoys a cloud forest microclimate with average temperatures of 18°C between December and March, and 20°C in April. With a total of 36 hectares, of which 13.75 are dedicated to coffee cultivation and 22.25 hectares are covered by pine forest to the south and broadleaf forest to the east and north, the farm possesses exceptional agroclimatic conditions for high-quality coffee cultivation. Its geographical position, varying altitudes, humid mountain microclimate, and optimal soils provide the ideal environment for optimal bean development, ensuring superior quality in its production.
