The Tinamit Tolimán Cooperative, founded after the coffee rust crisis in 2012, has revitalized coffee growing in San Lucas Tolimán, an emblematic region of the Department of Sololá, Guatemala. This group unites small local producers with a common goal: to produce high-quality coffee while strengthening the technical and productive capacities of its members, contributing to the well-being of families in the region. Its commitment to sustainability and excellence has led to the establishment of successful business relationships in international markets.
The cooperative's coffee comes from the foothills of the Tolimán and Atitlán volcanoes, at altitudes ranging from 1,500 to 2,000 meters above sea level. These lands, characterized by a temperate climate and mineral-rich soils, are ideal for cultivating varieties such as Bourbon, Pache, and Caturra, which grow under optimal shade conditions. The result is a coffee with a distinctive aromatic profile, citric acidity, remarkable body, and flavors that reflect the richness of the Atitlán region.
The production process for this batch begins when small farmers deliver their cherries at their peak ripeness to the cooperative. There, the cherries are carefully pulped, leaving the mucilage intact to preserve the bean's characteristics. Traditional drying includes rigorous quality control: the cherries are spread out in patios for five days and then moved to African beds, where they finish drying for approximately 15 days. This meticulous approach ensures the consistency and quality of each batch.
Thanks to their dedication and a comprehensive approach that spans from cultivation to processing, the Tinamit Tolimán Cooperative has solidified its reputation as a benchmark in the production of exceptional coffee. Each cup is a reflection of the collective efforts of the producers of San Lucas Tolimán and the natural wealth of the mountains surrounding the Tolimán and Atitlán volcanoes.
Extraction recipe
En V60, añadir 12 g de café con molienda medio gruesa y verter agua a 94ºC en varios pulsos: 50g + 50g + 100g (200g de agua en total). Tiempo total de extracción ~2:00 min.
Roasting and Shipping
We roast to order, which means we don't keep roasted coffee in stock at the shop. As a matter of routine, we have three roasting days per week: Monday, Tuesday, and Thursday (excluding public holidays). If you place your order before 8:00 a.m. on one of those days, your coffee will be roasted that same day; otherwise, it will be roasted the next day. Orders are sent to their destination the day after they are toasted (Tuesday, Wednesday and Friday respectively). Please note that if your order does not contain coffee, it will be shipped the next business day after it is placed and will arrive at its destination within the following 48 hours (excluding holidays). Shipping costs are calculated during the checkout process.
