Tinamit Tolimán Honey Espresso

The Cooperativa Tinamit Tolimán, formed after the 2012 coffee rust crisis, has revitalized coffee farming in San Lucas Tolimán, Guatemala, uniting small local producers from the Sololá Department. With a focus on member training and rigorous quality control, this cooperative has successfully established commercial relationships with international markets.

Their coffee comes from the slopes of the Tolimán and Atitlán volcanoes at altitudes of 1,500 to 2,000 meters, and has been grown in a temperate climate and mineral-rich soils where varieties such as Bourbon, Pache, and Caturra coexist. Committed to sustainability, their mission is to produce high-quality coffee while improving the technical and productive capacities of their members, contributing to the well-being of families in the region.

Regarding the process of this lot, small farmers deliver their cherries to the cooperative at their optimal ripeness, where they are carefully de-pulped, leaving the mucilage intact. Subsequently, the traditional drying process includes rigorous quality control, where the cherries are dried on patios for 5 days before continuing on African beds for about 15 days.
