Batch produced and collected from several producers in the Sallique area, Jaen.
Sallique is a welcoming place with an exceptional climate for growing quality coffees. It is a district in the province of Jaén, home to approximately 120 families, of which the Aromas del Valle Agrarian Cooperative has been working with 12 producer groups. Its diverse microclimates allow the coffee plantations to grow in optimal conditions, producing coffee beans of exceptional quality. Thanks to the combination of altitude, mild temperatures, and mineral-rich soils, Sallique coffee stands out for its fruity and sweet flavor, reaching its maximum expression. All our Sallique members are part of and benefit from all our agreements and projects as a cooperative.
Extraction recipe
In a V60, add 12g of medium-coarse ground coffee and pour in 94°C water in several pulses: 50g + 50g + 100g (200g of water in total). Total extraction time ~2:00 min.
Roasting and Shipping
We roast to order, which means we don't keep roasted coffee in stock at the shop. As a matter of routine, we have three roasting days per week: Monday, Tuesday, and Thursday (excluding public holidays). If you place your order before 8:00 a.m. on one of those days, your coffee will be roasted that same day; otherwise, it will be roasted the next day. Orders are sent to their destination the day after they are toasted (Tuesday, Wednesday and Friday respectively). Please note that if your order does not contain coffee, it will be shipped the next business day after it is placed and will arrive at its destination within the following 48 hours (excluding holidays). Shipping costs are calculated during the checkout process.
