Manuel Rivasplata is a coffee producer whose life is marked by years of effort, dedication, and love for the land. With 20 years of experience growing coffee, Manuel has perfected his craft at the El Limón farm, where he grows coffee varieties such as Caturra and Caturra Amarillo. Although his family always grew crops like corn, sugarcane, beans, and barley, it was coffee that captured his heart and his calling. Following in the footsteps of his parents, who were always farmers, Manuel found his true passion in coffee, a passion that has led him to become a leader in his community.
Five years ago, Manuel decided to join Aromas del Valle, where he found the necessary support to improve the quality of his coffee and expand his horizons. This support has been crucial to his growth, providing him with access to knowledge through technical assistance, financial products, and markets that previously seemed unattainable. Over the years, his commitment to excellence has been unwavering, and today he is dedicated to bringing out the best in each harvest, ensuring that his coffee is recognized not only for its quality but also for his dedication to a job well done. With two children whom he raised under the same principles of hard work and love for the land, Manuel continues to be an example of perseverance and passion, proving that with hard work and dedication, great dreams can be achieved.
Finca El Limon, located in Santa Teresa de Callayuc, is a reflection of Manuel's passion and dedication to his family, his land, and his work. Named for the lemon trees grown on the property, which symbolize the natural richness of the area. At El Limon, Manuel cultivates select varieties such as caturra and yellow caturra, known for their complex flavors that, combined with the microclimates of Santa Teresa, develop unique profiles.

En V60, añadir 12 g de café con molienda medio gruesa y verter agua a 94ºC en varios pulsos: 50g + 50g + 100g (200g de agua en total). Tiempo total de extracción ~2:00 min.
Roasting and Shipping
We roast to order, which means we don't keep roasted coffee in stock at the shop. As a matter of routine, we have three roasting days per week: Monday, Tuesday, and Thursday (excluding public holidays). If you place your order before 8:00 a.m. on one of those days, your coffee will be roasted that same day; otherwise, it will be roasted the next day. Orders are sent to their destination the day after they are toasted (Tuesday, Wednesday and Friday respectively). Please note that if your order does not contain coffee, it will be shipped the next business day after it is placed and will arrive at its destination within the following 48 hours (excluding holidays). Shipping costs are calculated during the checkout process.
