La Salsa Geisha Filter

In the mountainous region of Santa Bárbara, Honduras, specifically in the community of El Cedral, lies Finca La Salsa, where distinguished varieties such as Geisha and SL-28 thrive in cooler temperatures and protection from direct sunlight, under a unique microclimate due to its proximity to Lake Yojoa. These conditions contribute to the slow ripening of the cherries and an exceptionally sweet, superior cup profile.

Don Benjamín Paz, a close friend and producer who won the Cup of Excellence in 2022 and 2024, is concerned about the conservation of natural resources on his farm and uses forest protection practices, as well as guama and avocado trees to regulate the shade on his coffee plantation.

The Geisha variety exudes incredible elegance with its tall stature, long branches, and greater internodal spacing. This air of grandeur seems to translate to the cup; after undergoing a careful, washed fermentation process, it develops very expressive fruit flavors: tropical, stone fruit, citrus, and floral notes that contribute a delightful subtlety.
