Detailed Information
The Kirinyaga coffee region is located near Mount Kenya; coffees from this region ripen slowly at low temperatures. In this region, some 54,050 families grow more than 7,835 hectares of Arabica coffee, specifically of the SL 34, SL 28, Ruiru 11, and Batian varieties. Kirinyaga is the third-largest coffee region in the country.
The harvest is carried out manually, selecting only ripe cherries. Once harvested, they are pulped and subjected to aerobic fermentation. They are then washed, sorted in parchment by density, and air-dried until optimal moisture content is reached.
Extraction recipe
In a V60, add 12g of medium-coarse ground coffee and pour in 94°C water in several pulses: 50g + 50g + 100g (200g of water in total). Total extraction time ~2:00 min.
Roasting and Shipping
We roast to order, which means we don't keep roasted coffee in stock at the shop. As a matter of routine, we have three roasting days per week: Monday, Tuesday, and Thursday (excluding public holidays). If you place your order before 8:00 a.m. on one of those days, your coffee will be roasted that same day; otherwise, it will be roasted the next day. Orders are sent to their destination the day after they are toasted (Tuesday, Wednesday and Friday respectively). Please note that if your order does not contain coffee, it will be shipped the next business day after it is placed and will arrive at its destination within the following 48 hours (excluding holidays). Shipping costs are calculated during the checkout process.
