Every season we travel to Colombia to visit the Department of Huila, considered one of the best areas in the country for the growth and good performance of coffee plants. Here we work with Coocentral, a cooperative that focuses on total transparency and being close to producers with the aim of promoting their economic security.
It was in 2018 when we met Jaiber Joven, the producer of this lot. Jaiber lives with his wife and daughters on the farm he received as part of his inheritance from his father. Coffee cultivation is a family tradition, and they have always dedicated efforts to improving the quality of their varietals and developing new processing techniques.
After the cherries are hand-picked, the coffee is de-pulped and left to ferment for an extended period. Once washed, the beans are laid out to dry on 'paseras', a structure with large open spaces for air to flow, creating excellent circulation and thus a slow drying process for 28 days.
We roast to order, which means we don't keep roasted coffee in stock at the shop.
As a matter of routine, we have three roasting days per week: Monday, Tuesday, and Thursday (excluding public holidays). If you place your order before 8:00 a.m. on one of those days, your coffee will be roasted that same day; otherwise, it will be roasted the next day.
Orders are sent to their destination the day after they are toasted (Tuesday, Wednesday and Friday respectively).
Please note that if your order does not contain coffee, it will be shipped the next business day after it is placed and will arrive at its destination within the following 48 hours (excluding holidays).
Shipping costs are calculated during the checkout process.
