This lot, part of our direct relationship with Heleanna Georgalis since 2016, is the result of this producer's inspiration to produce the best coffee possible through her own personal learning process. Such is her dedication to caring for her harvest that part of the process of her lots is a closely guarded secret.
Small producers near the town of Gerse sell their cherries to the mill managed by Heleanna, where they are meticulously processed. The coffee plantations in the area are around 100 years old, endowing them with incredibly strong genetics and highlighting their famous Ethiopian heritage, which produces such unique results.
Although Heleanna keeps the details of the process under wraps, we know that the coffee arrives at her mill in the afternoon and is soaked in water to remove any defects. It is then transferred to African beds to rest for approximately 15 days under strict supervision to achieve the goal: to break new ground among naturally processed coffees and deliver a unique and delicious cup.
We roast to order, which means we don't keep roasted coffee in stock at the shop.
As a matter of routine, we have three roasting days per week: Monday, Tuesday, and Thursday (excluding public holidays). If you place your order before 8:00 a.m. on one of those days, your coffee will be roasted that same day; otherwise, it will be roasted the next day.
Orders are sent to their destination the day after they are toasted (Tuesday, Wednesday and Friday respectively).
Please note that if your order does not contain coffee, it will be shipped the next business day after it is placed and will arrive at its destination within the following 48 hours (excluding holidays).
