Detailed Information
This coffee is part of our direct-to-producer initiative in the Cajamarca region of Peru. This area is renowned for the high quality of its coffees, a result of its high-altitude cultivation and tropical climate.
Hector is a young man passionate about coffee, who since childhood has helped his parents on the farms to improve its quality over the years.
The coffee harvest is selective; only cherries at their optimal ripeness are processed. After discarding the floaters, the coffee is pulped and fermented anaerobically for 84 hours.
Once this time has elapsed, the grain is washed in tanks with clean water, and then drying begins on African beds under a solar tent for 15-18 days until it reaches its optimal moisture level.
Extraction recipe
In a V60, add 12g of medium-coarse ground coffee and pour in 94°C water in several pulses: 50g + 50g + 100g (200g of water in total). Total extraction time ~2:00 min.
Roasting and Shipping
We roast to order, which means we don't keep roasted coffee in stock at the shop. As a matter of routine, we have three roasting days per week: Monday, Tuesday, and Thursday (excluding public holidays). If you place your order before 8:00 a.m. on one of those days, your coffee will be roasted that same day; otherwise, it will be roasted the next day. Orders are sent to their destination the day after they are toasted (Tuesday, Wednesday and Friday respectively). Please note that if your order does not contain coffee, it will be shipped the next business day after it is placed and will arrive at its destination within the following 48 hours (excluding holidays). Shipping costs are calculated during the checkout process.
