Each season we travel to Colombia to visit the Department of Huila, considered one of the best areas in the country for the growth and high yield of coffee plants. Here we work alongside Coocentral, a cooperative that focuses on complete transparency and close collaboration with producers to promote their economic security.
Fernando, the producer of this lot, has been a coffee farmer since childhood, although at 18 he moved to the Department of Caquetá in search of opportunities, where he remained for 25 years. In 2012, he decided to return to Huila to start the farm project he is currently involved in with his wife, focusing exclusively on the production of high-quality coffees.
The process for this coffee begins with the hand-picking and selection of the cherries. Next, the beans are pulped and left to ferment. Finally, the coffee beans are left to dry on raised beds for 20 to 30 days until they reach the optimal moisture level.
We roast to order, which means we don't keep roasted coffee in stock at the shop.
As a matter of routine, we have three roasting days per week: Monday, Tuesday, and Thursday (excluding public holidays). If you place your order before 8:00 a.m. on one of those days, your coffee will be roasted that same day; otherwise, it will be roasted the next day.
Orders are sent to their destination the day after they are toasted (Tuesday, Wednesday and Friday respectively).
Please note that if your order does not contain coffee, it will be shipped the next business day after it is placed and will arrive at its destination within the following 48 hours (excluding holidays).
Shipping costs are calculated during the checkout process.
