Farid Keno Natural Filter

This lot is part of our direct trade initiative in Ethiopia, the birthplace of coffee. Its optimal terroir and climate allow coffee trees to grow wild, developing indigenous varieties unique in the world that capture the richness of their origin.

Farid's farm is located in the Jimma region at an altitude of 2,000 meters, and as a traditional Ethiopian producer, he employs organic methods with a focus on environmentally sustainable practices. His farm cultivates JARC varieties, which originate from a traditional local Ethiopian variety and were developed in the 1970s at the Jimma Agricultural Research Center (JARC). This variety was selected from a mother tree in the village of Bishari.

After manually harvesting the coffee cherries, Farid places them on African beds where he continues to select only the ripe fruit. There, the coffee will dry for about 20 days, protecting the cherries from the sun during the hottest hours of the day until the appropriate moisture level is reached.
