Esther Sampertegui is a coffee producer who lives in the town of Santa María, in the district and province of Jaén, department of Cajamarca. This area, characterized by its cool and windy climate, is located at over 1,700 meters above sea level, an ideal altitude that allows for obtaining excellent quality coffees, with very attractive attributes in both aroma and flavor.
Esther lives with her husband and children, and as a mother, she dreams of seeing them become professionals and good citizens. She is an active, organized, and passionate coffee producer; she is enthusiastic about learning everything related to this crop. In 2025, she is training with the Aromas del Valle technical team in harvesting and post-harvest techniques (fermentation), with the goal of continuing to improve the quality of the coffees from her district.
For Esther, it's a source of pride to tell her neighbors and family that her coffees are being exported and recognized by international roasters. It motivates her to keep improving every day.
Finca El Mirador, located in the community of Santa María, in Jaén, stands out for its productivity and for offering a wide range of unique flavors. It benefits from the area's privileged microclimates, where the altitude, volcanic soil, and variable temperatures favor a slow ripening of the beans, guaranteeing a complex and high-quality coffee. Its name pays homage to the breathtaking landscape that can be seen from there, with the region's immense valleys taking center stage.
Extraction recipe
En V60, añadir 12 g de café con molienda medio gruesa y verter agua a 94ºC en varios pulsos: 50g + 50g + 100g (200g de agua en total). Tiempo total de extracción ~2:00 min.
Roasting and Shipping
We roast to order, which means we don't keep roasted coffee in stock at the shop. As a matter of routine, we have three roasting days per week: Monday, Tuesday, and Thursday (excluding public holidays). If you place your order before 8:00 a.m. on one of those days, your coffee will be roasted that same day; otherwise, it will be roasted the next day. Orders are sent to their destination the day after they are toasted (Tuesday, Wednesday and Friday respectively). Please note that if your order does not contain coffee, it will be shipped the next business day after it is placed and will arrive at its destination within the following 48 hours (excluding holidays). Shipping costs are calculated during the checkout process.
