Each season we travel to Colombia to visit the Huila Department, one of the best areas in the country for coffee plant growth and high yields. Thanks to the relationship we've built with Elver, the compensation for the quality of his coffee is now more than double what he received working with the commercial market. This has allowed him to invest in improving his facilities and building a new coffee dryer.
His farm is located high on a hill, requiring a steep descent to reach his plantation. The landscape is spectacular, with its heights and numerous hills that support a great diversity of vegetation. Elver cultivates several mixed varieties, although Bourbon and Colombia grapes are the primary varieties grown on his farm.
After manual harvesting, the coffee is received for pulping and fermentation in tanks. Afterward, it is washed and taken to the solar dryer where it rests for about 20 days until it reaches the appropriate moisture level.
We roast to order, which means we don't keep roasted coffee in stock at the shop.
As a matter of routine, we have three roasting days per week: Monday, Tuesday, and Thursday (excluding public holidays). If you place your order before 8:00 a.m. on one of those days, your coffee will be roasted that same day; otherwise, it will be roasted the next day.
Orders are sent to their destination the day after they are toasted (Tuesday, Wednesday and Friday respectively).
Please note that if your order does not contain coffee, it will be shipped the next business day after it is placed and will arrive at its destination within the following 48 hours (excluding holidays).
Shipping costs are calculated during the checkout process.
