Elmer Pérez is a man whose life is deeply intertwined with coffee. Together with his wife, he has worked tirelessly to provide for his family, transforming his farm into a testament to effort, dedication, and love for his craft. Each harvest season, Elmer devotes himself entirely to the crop, constantly striving to innovate and elevate the quality of his coffee. Thanks to this commitment, he has earned the respect of his community and the unwavering support of the Aromas del Valle Cooperative.
The El Yllape farm, located in the Querocotillo district, benefits from a cool climate and ideal altitude, creating a perfect environment for cultivating high-quality coffee. Throughout the year, moderate temperatures and well-distributed rainfall allow the plants to flower and ripen slowly, resulting in more aromatic beans with exceptional flavor complexity.
The soil at El Yllape also plays a fundamental role. Rich in nutrients thanks to the area's biodiversity, it provides the plants with optimal conditions to grow healthy and strong. This farm is not only an ideal place to produce coffee, but also an example of how respect for nature and working in harmony with the environment can result in superior quality coffee that expresses the best of the Querocotillo region.
Extraction recipe
In a V60, add 12g of medium-coarse ground coffee and pour in 94°C water in several pulses: 50g + 50g + 100g (200g of water in total). Total extraction time ~2:00 min.
Roasting and Shipping
We roast to order, which means we don't keep roasted coffee in stock at the shop. As a matter of routine, we have three roasting days per week: Monday, Tuesday, and Thursday (excluding public holidays). If you place your order before 8:00 a.m. on one of those days, your coffee will be roasted that same day; otherwise, it will be roasted the next day. Orders are sent to their destination the day after they are toasted (Tuesday, Wednesday and Friday respectively). Please note that if your order does not contain coffee, it will be shipped the next business day after it is placed and will arrive at its destination within the following 48 hours (excluding holidays). Shipping costs are calculated during the checkout process.
