El Cielito is an internationally renowned region for the excellence of its coffees and the uniqueness of their flavor profiles. This recognition is largely due to the privileged microclimate that characterizes the area, as well as the adaptation and evolution of different coffee varieties that thrive in this environment. In particular, the SL28 variety, a jewel in itself, has found its home in this unique corner of the world, even though this variety typically flourishes in African countries such as Kenya and Tanzania.
Our partnership with Darwin Coffee has been a cornerstone of our commitment to coffee excellence. Since 2016, we have had the pleasure of working closely with Darwin, whose exceptional dedication to coffee cultivation is reflected in every cup we enjoy. His focus on the sustainability of the region and his relentless pursuit of innovation in fermentation processes have inspired us to focus on the post-harvest phase of this extraordinary coffee.
The process for this micro-lot of SL28 variety is truly special. The cherries are meticulously selected before undergoing a fermentation process in tanks and are subsequently washed. They are then transferred to raised African drying beds to reach the optimal moisture level. Each stage of this process is carried out with an attention to detail that reflects the very essence of El Cielito and the excellence of the SL28 variety coffee grown here.
Extraction recipe
In a V60, add 12g of medium-coarse ground coffee and pour in 94°C water in several pulses: 50g + 50g + 100g (200g of water in total). Total extraction time ~2:00 min.
Roasting and Shipping
We roast to order, which means we don't keep roasted coffee in stock at the shop. As a matter of routine, we have three roasting days per week: Monday, Tuesday, and Thursday (excluding public holidays). If you place your order before 8:00 a.m. on one of those days, your coffee will be roasted that same day; otherwise, it will be roasted the next day. Orders are sent to their destination the day after they are toasted (Tuesday, Wednesday and Friday respectively). Please note that if your order does not contain coffee, it will be shipped the next business day after it is placed and will arrive at its destination within the following 48 hours (excluding holidays). Shipping costs are calculated during the checkout process.
