El Cielito is internationally renowned for its extraordinary coffees and unique profiles. The main reasons for this are the microclimate the area enjoys, along with the adaptation and evolution of the different varieties grown there. Specifically, the "Pacas" variety was imported from El Salvador, where it mutated from a Bourbon variety.
Darwin coffee has become a staple on our menu since we began working with their coffees in 2016. Their outstanding dedication to field care, where they work to promote the area's sustainability, as well as to the development and innovation of fermentation processes, has led us to continue focusing our collaboration on the post-harvest phase.
Regarding the process for this batch, the cherries are hand-picked, separating the unripe fruit from the ripe ones by Darwin himself. After pulping, they are left to ferment in tanks for 20 hours and finally washed and transferred to African beds for drying for approximately 15 days.
We roast to order, which means we don't keep roasted coffee in stock at the shop.
As a matter of routine, we have three roasting days per week: Monday, Tuesday, and Thursday (excluding public holidays). If you place your order before 8:00 a.m. on one of those days, your coffee will be roasted that same day; otherwise, it will be roasted the next day.
Orders are sent to their destination the day after they are toasted (Tuesday, Wednesday and Friday respectively).
Please note that if your order does not contain coffee, it will be shipped the next business day after it is placed and will arrive at its destination within the following 48 hours (excluding holidays).
Shipping costs are calculated during the checkout process.
