This coffee is part of our direct-to-producer initiative in the Cajamarca region of Peru. Specifically, this lot comprises coffee produced by several families in the village of Santa Teresa.
Santa Teresa belongs to the province of Cutervo, in Cajamarca, and its diverse microclimates allow coffee plantations to grow in optimal conditions, producing coffee of exceptional quality. Thanks to the combination of altitude, mild temperatures, and mineral-rich soils, the coffee from this area stands out for its attributes and complexity. There, of the 100 families that live in the village, 15 are producers affiliated with the cooperative that receives the coffee cherries and subsequently processes and prepares them for export.
The coffee harvest is selective; only cherries at their optimal ripeness are processed. After discarding the floating cherries, the coffee is pulped and fermented anaerobically for 72 hours. Following this time, the beans are washed in tanks with clean water and then dried on raised beds under a solar tent for 15-18 days until they reach their optimal moisture level.
We roast to order, which means we don't keep roasted coffee in stock at the shop.
As a matter of routine, we have three roasting days per week: Monday, Tuesday, and Thursday (excluding public holidays). If you place your order before 8:00 a.m. on one of those days, your coffee will be roasted that same day; otherwise, it will be roasted the next day.
Orders are sent to their destination the day after they are toasted (Tuesday, Wednesday and Friday respectively).
Please note that if your order does not contain coffee, it will be shipped the next business day after it is placed and will arrive at its destination within the following 48 hours (excluding holidays).
