Each season we travel to Colombia to visit the Department of Huila, one of the best areas in the country for growing coffee plants and for their good yield.
Javier, a first-generation coffee grower, manages the "El Hospital" farm at 1780 meters above sea level with the Pencué Fierro family.
The name "El Hospital" refers to its history: neighbors would take their sick animals there for treatment.
Here, coffee is harvested manually and floated in plastic containers. Afterward, it is dry-pulped without using water. The coffee ferments for 24 hours in a tiled tank, then remains covered with plastic for an additional 40 hours. After that, it is washed twice. Finally, the beans are dried in a marquee for 12 days.
Ingredientes: agua y café arábica tostado por Right Side Coffee. Mantener refrigerado entre 5 y 15 ºC y una vez abierto, consumir en 7 días.
