Don Benjamín Paz, a close friend and winner of the 2022 Cup of Excellence, demonstrates a deep commitment to the conservation of natural resources on his farm. Through meticulous forest protection practices and the use of guama and avocado trees to regulate shade over his coffee plantation, he ensures a harmonious balance between coffee production and environmental preservation.
This particular lot is exclusively of the Pacas variety and comes from Benjamin's oldest farm in the El Cedral community, planted in 2015. Located in a mountainous setting, the farm enjoys cool temperatures and natural protection from direct sunlight, thanks to its proximity to Lake Yojoa. This unique microclimate plays a key role in the slow ripening of the cherries, resulting in an exceptionally sweet and superior cup profile.
Although Benjamin describes the process as simple, the sequence reveals his meticulous attention to detail: the coffee cherry is fermented in plastic barrels for two days (48 hours), then pulped and stored again with its mucilage in airtight barrels for another 48 hours. After this time, the coffee is dried on shaded drying beds for 15-18 days.
Intense aromas of stone fruit, orange, sweet almonds, and muscatel. On the palate, it is creamy and very well-balanced, with bright notes of orange wine and apricots, a touch of honey sweetness, and a finish of sweet almonds. A complex and distinctive coffee that makes for a truly unique cup.
Extraction recipe
In a V60, add 12g of medium-coarse ground coffee and pour in 94°C water in several pulses: 50g + 50g + 100g (200g of water in total). Total extraction time ~2:00 min.
Roasting and Shipping
We roast to order, which means we don't keep roasted coffee in stock at the shop. As a matter of routine, we have three roasting days per week: Monday, Tuesday, and Thursday (excluding public holidays). If you place your order before 8:00 a.m. on one of those days, your coffee will be roasted that same day; otherwise, it will be roasted the next day. Orders are sent to their destination the day after they are toasted (Tuesday, Wednesday and Friday respectively). Please note that if your order does not contain coffee, it will be shipped the next business day after it is placed and will arrive at its destination within the following 48 hours (excluding holidays). Shipping costs are calculated during the checkout process.
