Detailed Information
This coffee comes from the Aromas del Valle Cooperative, in the Santa Teresa-Queromarca-Cutervo area, Peru. Ausberto Oblitas León is a passionate producer and a member of the cooperative since 2018. He is also one of the pioneers in cultivating coffee in this area since 2000. He currently grows 2.75 ha on his farm “La Loma,” at 2000 meters above sea level, with Typica and Yellow Caturra varieties.
For Ausberto, coffee is not just a crop, but a way of life. His family and farm are his greatest motivation, and his goal is to become the best producer in the Callayuc district. Thanks to investments in a drying module and a fermentation tank in 2022 and 2023, he has been able to perfect the quality of his coffees season after season, particularly excelling in washed process coffees with fruity and complex notes.
The harvest is entirely selective, avoiding immature, overripe, or fallen cherries. The cherries are floated in water to remove floaters and defects, then pulped and anaerobically fermented for 72 hours. After fermentation, the beans are washed with clean water and dried on African beds under a solar tent for 15-18 days. Finally, the parchment is packed in Grainpro or carbonated bags and stored on pallets, protected from moisture and odors, until transported to the cooperative.
Extraction recipe
In a V60, add 12g of medium-coarse ground coffee and pour in 94°C water in several pulses: 50g + 50g + 100g (200g of water in total). Total extraction time ~2:00 min.
Roasting and Shipping
We roast to order, which means we don't keep roasted coffee in stock at the shop. As a matter of routine, we have three roasting days per week: Monday, Tuesday, and Thursday (excluding public holidays). If you place your order before 8:00 a.m. on one of those days, your coffee will be roasted that same day; otherwise, it will be roasted the next day. Orders are sent to their destination the day after they are toasted (Tuesday, Wednesday and Friday respectively). Please note that if your order does not contain coffee, it will be shipped the next business day after it is placed and will arrive at its destination within the following 48 hours (excluding holidays). Shipping costs are calculated during the checkout process.
