Description
The Moka pot, or "Italian," is probably the most commonly used method in Spanish homes, or at least the first one you'll use in your exploration of the world of coffee.

With this recipe, we'd like to enhance your experience and help you achieve exceptional cups of coffee using such a popular method.

Fine. For reference, on the Chestnut C3 hand grinder, we find the grind at three coarseness levels, starting from 0.

Amount
Given the number of models, sizes, and manufacturers, one of the golden rules of this method is to work with a 1:10 ratio: one part coffee to 10 parts water.

To find out how much water your machine can hold, using a scale, fill the bottom of the machine with water up to the valve.

For example, with 200 g of water, we will put 20 g of coffee in the funnel.

Extraction time
It will depend on the size of the coffee maker and the heat source.

Water temperature
The water must be boiling, as this method uses the energy of the boiling water to promote extraction.

Advice

This method is very sensitive to prolonged exposure to high temperatures. The coffee needs to be extracted, but ideally not burned. To avoid this, steps such as using hot (not boiling) water from the beginning will reduce the overall brewing time and improve extraction.

Steps

Step 1

Preheat the water in a kettle. While it reaches temperature, weigh the coffee and grind it.

Step 2

Place the coffee carefully into the funnel, it should not be necessary to tamp it.

Step 3

Once the water temperature has reached 90º, pour it into the bottom of the machine.

Step 4

Place the coffee funnel at the bottom of the machine, and with the help of a cloth, close the machine, making sure it is perfectly sealed.

Step 5

Leave the Moka pot on medium/high heat (e.g., 7 out of 9) with the lid closed. Pay attention to the moment you hear the machine brew the first drops of coffee.

Step 6

This is the most critical part. Once you notice the coffee has been fully extracted, remove the machine from the heat to prevent it from burning the coffee further.

Remove the coffee from the machine and, while it's tempering, rinse all parts thoroughly with warm water. It's a myth that moka pots can't be washed with soap, but it's best to avoid this by thoroughly rinsing everything immediately after each use. Getting into this habit will prevent dirt buildup and you won't have to worry about using soap in the future!
