Could you share what inspired you to open Blackbird Café?

Having worked in some really cool specialty coffee shops while living in Sydney, Australia. There I worked with people passionate about the world of specialty coffee and seasonal pastries. I learned a lot, first as a barista and then as a pastry assistant, and well, I wanted to bring those ideas with me when I moved to Spain.

The cinnamon roll is one of your star products. What makes this sweet treat so special, and what's the secret behind its popularity?

It was never our intention for it to become our star product; it just happened! I suppose what makes it so special is that it's a very simple treat—it's like the comfort zone of sweets. Sweet, fluffy, warm—what more could you ask for?

How do you maintain consistency and quality in every cup you serve?

Entering a mental bubble in the middle of service so we can concentrate on weighing each coffee and maintaining consistency in all drinks even though there are a lot of people waiting, which would be the case on weekends!

It's possible, but people have to be willing to wait a little while :)

How does the local community influence the identity and atmosphere of Blackbird Café?

Blackbird is a great mix of locals, expats, and tourists!

For me, it's a perfect mix, since I myself was once a tourist in Valencia and now I am, and will continue to be, an expat. And well, I think this mix of everything makes everyone feel welcome and creates a very multicultural atmosphere.

How would you describe your experience with Right Side Coffee and what made you choose our coffees?

We've worked together since we opened in 2018. Initially, they were part of our monthly roaster rotation, but we decided to stick with Right Side because, aside from the fact that their coffees are always amazing, I really enjoy the communication between us. I feel like we have a mutual admiration for what we do :)
