The Variable That Is Standardized by Default and Perhaps Shouldn't Be
When we talk about pressure in espresso, we refer to the force exerted by water on the compacted coffee puck inside the group head.
It is often said that 9 bars is the ideal pressure for a good espresso. While not untrue, there are other options. Generally speaking, it's a middle ground and a standard that allows us to extract repeatable and balanced espressos. Very low pressures can result in insufficient extractions, weak beverages... while excessively high pressures can over-extract, leading to bitter flavors and an overly dense and harsh body. The most important thing when adjusting this variable, like all others, is to pay attention to the coffee and what it tells me it needs.

Different Machines Apply Pressure in Different Ways
Some do it in a more rigid way, while others offer possibilities for adjustment and variation. The most common pressure profiles are:

Gradual variations: begins with low pressure, which rises to a peak (e.g., 9 bars) and then slowly decreases until the end of the extraction. This can help enhance sweetness and balance the beverage.

Decreasing pressure: starts with higher pressure and then gradually reduces throughout the extraction. This can help control bitterness.

Sustained low pressure: maintains a constant low pressure during extraction. This can give us delicate espressos with greater clarity.
We must bear in mind that a factor that greatly influences pressure is the resistance presented by the coffee puck. The initial phase of extraction is decisive for the overall development of the beverage, and this is largely defined by how the water first makes contact with the coffee (provided other variables are also adjusted, of course).
As the puck gets wet, it swells, and the ground coffee particles adhere firmly to each other, allowing extraction to occur. A great solution to ensure uniform and gentle wetting is pre-infusion. This involves starting the extraction with low pressure, slowly wetting the coffee. This helps prevent channeling and ensures that the water flows evenly through the entire puck, leading to more balanced extractions.

Flavor
Different pressures can highlight various aromatic compounds. Lower pressures tend to emphasize sweetness and clarity, while higher pressures can extract more body and intensity. By varying the pressure, you can sculpt the flavor profile to highlight specific notes in your coffee.

Body and Mouthfeel
The pressure profile directly affects the water flow through the coffee puck, which in turn influences the viscosity and texture of the espresso. Higher pressure leads to denser bodies. A well-executed pressure profile can result in a more luxurious and balanced mouthfeel.

Masking Imperfections
The pressure profile can help compensate for small inconsistencies in grind size or distribution. Understanding this can be a great advantage when working with uneven grinds, for example: by adjusting the pressure, extraction can be slowed down or sped up in real-time, preventing over-extraction or under-extraction in certain parts of the puck.
