Okay, but what is cold brew? In short, it's the result of infusing ground coffee with room-temperature water. While anyone can do these steps, the results will vary greatly depending on the combination of variables. Let's cover some basics.

First, choose the coffee. It's important to choose the profile based on the qualities you want in your beverage: a sweet cup with chocolate notes or a fruity, more complex drink. To enjoy the best clarity and brightness in your final beverage, regardless of your individual tastes, we recommend using coffees from our menu roasted for filter methods.

The second ingredient is equally important: water. Always choose filtered or bottled water, as tap water contains substances that won't do any good to the flavor and quality of your drink :)

Preparation is quite simple. We can use accessories like the Hario Mizudashi if our consumption is moderate, and if we want to make more complex drinks in larger quantities, our faithful companion will be the Toddy . It's also recommended for small businesses that want to serve their own recipe for this refreshing coffee. For those just starting out and wanting to experiment for the first time, a good method is to use that French press you have at home, filtering the result with a paper filter for a cleaner finish.

Where to start? There are as many recipes as our imagination allows. However, we must always keep in mind that coffee is instant coffee, so we will have to combine the variables with this important detail in mind. That is, if we choose a coarser grind we can extend the extraction time, and vice versa if we use a finer grind. Similarly, the solubility will be affected by the temperature of the water, the temperature of the place where we infuse the mixture, or the turbulence created when mixing water and coffee. Everything has an impact, so it's all a matter of combining these variables in different ways until you find your favorite recipe.

In our case, we must admit that we're not fans of the classic profiles associated with this beverage. Often, taking the risk of drinking it outside the home exposes you to very bitter coffees, chocolatey notes with zero acidity or personality, which could have been made using a normal variety or perhaps sacrificing a more special coffee. We're not willing to give up complexity in this beverage, so in this step-by-step guide, we give some hints about the recipe we like to achieve a brighter, fruitier, and more distinctive result.
