Preparing a good pour-over coffee isn't just about following a recipe. Even using the same method and equipment, two different coffees may require different adjustments to express their full potential.
Therefore, before discussing exact times or specific grinder settings, it's helpful to understand a fundamental concept: calibrating a coffee means finding the parameters that yield a balanced and expressive cup from that particular coffee.
And while it might seem like something reserved for professional baristas, it's perfectly applicable at home.
What does it mean to calibrate a coffee?
When we prepare pour-over coffee, we are trying to control the extraction: the process by which water comes into contact with ground coffee and extracts different soluble compounds.
The difficulty lies in the fact that not all of these compounds are extracted at the same rate, nor do they contribute equally to the perception of the cup.
Therefore, an under-extraction can result in an underdeveloped, acidic, or weak cup. An over-extraction can lead to a bitter, dry, or astringent perception.
But there's an important idea: the goal isn't to achieve the maximum possible extraction, but to find an extraction that works for that coffee and results in a pleasant cup.
The SCA uses a ratio of 55 grams of coffee per liter of water as a reference in its coffee maker evaluation protocols.
This is roughly equivalent to a 1:18 ratio, although in manual brewing, we will find recipes that use different proportions. In fact, current brewing guides for different coffees show ratios from approximately 1:14 to 1:18, depending on the coffee and the desired profile.
Therefore, a recipe should be understood as a starting point, not as a law.

1. Start with a reproducible recipe
Before touching the grinder, we need to be able to repeat the preparation and control all variables.
A simple recipe could be:

15g of coffee
-
250g of water
-
A temperature around 90–94 °C
-
Medium grind as a starting point
Not because these values are universally correct, but because they provide a base from which to start making adjustments.
Consistency is more important than finding a "perfect" recipe.
If each preparation changes, it will be very difficult to know what caused the change in the cup.
2. The grind: the first adjustment you should try
If there's one variable that deserves special attention when calibrating a pour-over, it's the grind.
As a general rule:
Finer grind → greater resistance to flow and, potentially, greater extraction.
Coarser grind → less resistance to flow and, potentially, less extraction.
But be careful: this doesn't mean we simply have to grind finer and finer until we extract "all" the coffee.
An excessively fine grind can increase the resistance of the coffee bed and alter water flow. Additionally, different coffees can respond very differently to the same adjustment.
Therefore, it's advisable to start at a reasonable point and make small changes.
There's no need to radically change the grinder setting. A small adjustment and a new preparation usually provide much more information than modifying several parameters at once.
3. Temperature also matters
Temperature is another calibration tool.
If the coffee is delicate and we want to preserve certain attributes, we can experiment with a slightly lower temperature.
If we seek to promote greater extraction, especially in certain coffees and roast profiles, we can try higher temperatures.
The important thing is not to modify it at the same time as everything else.

4. The ratio determines how concentrated the beverage is
The ratio is the relationship between the amount of coffee and the amount of water used.
For example:
15g coffee + 250g water = approximately 1:16.7
Changing the ratio modifies the concentration of the beverage, but we should not confuse concentration with extraction.
We can prepare a more concentrated cup without necessarily extracting more from the coffee, and vice versa.
Therefore, if the cup seems too intense or too light, the ratio can be an interesting variable to adjust.
And as with other variables, remember: there is no single correct ratio for all coffees.
5. Blooming: wetting before extracting
Before the main pour, many pour-over recipes use a small initial amount of water to saturate the ground coffee.
This is known as blooming: its main function is to allow the coffee to get evenly wet and to facilitate the release of CO₂ retained in freshly roasted coffee.
A standard recipe would be to pour approximately twice the weight of water to coffee during the bloom and wait around 30–45 seconds before continuing.
It's not necessary to turn that amount of time into an absolute rule: the important thing is to observe how much gas that coffee is releasing, and based on that, decide when to start the extraction.
6. Control pouring and agitation
The way we pour the water also modifies the behavior of the coffee bed.
The pouring height, speed, amount of water added at each stage, and agitation can all affect the flow.
Therefore, during calibration, it's advisable to keep the technique as stable as possible.
If a recipe uses multiple pours, try to roughly repeat the same volumes and timings.
And, above all, do not introduce different agitation in each preparation.

7. Extraction time is a data point, not a goal
This is probably one of the most common mistakes when we start calibrating a pour-over.
"My coffee took 2:30 minutes, so it's wrong."
Not necessarily.
Total time depends on multiple variables: grind, extraction method, filter, amount of coffee, amount of water, pouring, agitation, and the characteristics of the coffee itself. Time works better as a diagnostic tool than as an absolute goal.
If you make exactly the same recipe and a change in grind significantly increases the drainage time, that data can help you interpret what is happening.
But we shouldn't adjust the coffee solely to make the timer hit a certain number.
The cup dictates.
8. Learn to read the cup
This is where calibration truly begins.
After preparing the coffee, taste it and ask yourself:
Is it too acidic and underdeveloped?
This could be a sign of insufficient extraction.
Try a slightly finer grind or experiment with a slightly higher temperature.
Is it bitter, dry, or astringent?
This could indicate excessive or uneven extraction.
Try a slightly coarser grind and observe how the cup changes.
Is it too concentrated or too light?
Here, it might make more sense to revise the ratio.
Is the cup pleasant but missing something?
Don't change five things.
Make a small adjustment and prepare again.
This comparison process is much more informative than searching for a universal recipe.
9. Change only one variable at a time
This is probably the most important rule in the entire process.
Imagine you prepare a coffee with:

15g of coffee
-
250g of water
-
92 °C
-
medium grind
And the result is too acidic.
If in the next preparation you simultaneously change the grind, temperature, ratio, and pouring technique, you might get a better cup.
But you won't know why.
However, if you only make the grind slightly finer, you can compare both preparations and learn how that coffee responds.
Calibrating is controlled experimentation.
And the more consistent you are, the easier it will be to understand what's happening.

A recipe isn't the end: it's the beginning
One of the greatest pleasures of specialty coffee is precisely discovering that there isn't just one correct way to prepare coffee.
The same bean can offer different profiles depending on how we prepare it.
Current preparation guides demonstrate this: even coffees with similar characteristics can receive different recommendations for ratio, temperature, grind, agitation, and time.
Therefore, when we open a new bag, our first recipe should simply be a starting point.
From there:
Try. Observe. Adjust. Try again.
